Southwest Baked Potato

4 large russet potatoes

Topping:

3 tbsp. olive oil

1 tsp. salt

1/2 tsp. cumin

1/2 tsp. paprika

1/2 tsp. garlic powder

1/4 tsp. crushed red pepper

1/4 tsp. ground pepper

 

Pierce potatoes with fork and microwave until tender. Put potatoes on baking sheet brushed with olive oil. Make an 'X' into potatoes and mash down with masher.

Combine all ingredients into a small bowl.

 Brush potatoes generously with olive oil mixture.

Bake at 400 degrees for about 30 minutes.

May be served with chile, cheese, sour cream, and/or green onions.
